Sugar-Free PBfit Mummy Truffles
INGREDIENTS
- 1/3 cup tbsp PBfit No Sugar Added
- Toppings:
- 1/2 tsp ground cinnamon
- 1/4 tsp pumpkin pie spice
- 1 3/4 cups graham cracker crumbs
- Halloween candy eyes, or black icing
- 2 Tbsp sweetener of choice
- 1/2 cup pumpkin puree
- 10 ounces sugar - free white chocolate, melted
- 2 ounces full-fat brick cream cheese, softened to room temperature

In a food processor add cream cheese, pumpkin, sweetener, Sugar-Free PBfit, graham crackers, cinnamon and pumpkin spice.

Process until it comes together into a soft dough.

Scoop into balls onto a parchment lined sheet tray and roll till smooth gently press down to create a flat bottom.

Chill for 30 minutes.

Melt white chocolate in microwave.

Remove chilled truffle bites and dip in white chocolate.

Once all are dipped drizzle with remaining white chocolate to create a mummy like look. If using candy eyes stick immediately after you drizzle each truffle so they will stick. If using black frosting for the eyes let truffles set, then dab eyes with frosting on each truffle. Chill for 10 - 15 minutes to finish setting up.
