INGREDIENTS
- 1 cup PBfit Simply Peanut
- sliced almonds, peanuts, cashews, etc
- 1/3 cup coconut aminos
- 1 clove garlic
- 2 Tbsp honey
- 1 knob of fresh ginger, peeled
- 1 - 2 Tbsp chili paste
- 2 Tbsp avocado oil
- half a head of purple cabbage, shredded
- 2 - 3 cups shelled edamame
- 2 cups quinoa, cooked
- 1/3 cup rice vinegar
- 1/4 cup water
- 1 cucumber, diced
- 1 - 2 bell peppers, diced
- 2 ripe mangoes, diced
- 2 Tbsp sesame oil

Cook the quinoa and edamame according to package directions.

Veggies: Chop everything up.
