INGREDIENTS

  • 1 cup PBfit Simply Peanut
  • 1 Tbsp fresh grated ginger
  • 2 large cloves garlic
  • 1 Tbsp rice vinegar
  • 16 oz thick noodles
  • 1 - 1 1/2 cups water
  • 1/2 tsp red pepper flakes
  • 1 Tbsp avocado oil
  • 4 Tbsp low sodium soy sauce or coconut aminos
  • 1 Tbsp toasted sesame oil

DIRECTIONS

    Bring a large pot of water to a boil and cook noodles according to package instructions.

    Finely mince the garlic and add to a saute pan with the oil.

    Saute over low heat for 2-3 minutes or until golden brown. Add in the grated ginger and saute for 1-2 more minutes.

    Add in the soy sauce, vinegar, sesame oil, red pepper flakes, and PBfit Simply Peanut. Add in water and continue cooking for 1-2 minutes if the sauce is too thick add a little more water or too thin add a little more PBfit powder.

    Toss noodles with the sauce and garnish with green onions and chopped peanuts.
