INGREDIENTS

  • 1 1/4 cups PBfit Classic
  • 1/2 tsp baking soda
  • 1 1/4 cups blanched almond flour
  • 1 egg
  • black icing
  • 1/2 cup salted butter softened
  • 1 tsp salt
  • 2/3 cup granulated sugar
  • 1 tsp vanilla extract
  • white icing
  • 1 bag of whoopers

DIRECTIONS

    Preheat the oven to 350°F.

    Line a large baking sheet with parchment paper and set aside.

    In a large bowl, combine your dry ingredients and mix well. In a separate mixing bowl,cream together the softened butter, and sugar until light and fluffy. Add in egg and vanilla extract, and continue creaming until smooth. Mix in the dry ingredients until well combined and scrape the sides of the bowl as needed.

    Using a large spoon, scoop out heaped tablespoons of the cookie dough. Using your hands, roll them into balls and roll in granulated sugar if desired. Place them on the lined sheet. Lightly press down on each cookie with a fork or your thumb.

    Bake the cookies for 9 - 10 minutes, or until the edges just begin to turn golden. Remove from the oven and let cool on the baking sheet completely.

    Use whoppers for the spider's body. With the black icing form the spider's legs. Create eyeballs using the white and black icing.

Im going to give these cookies 5 stars. They mixed up easily. They cooked nicely. 10 minutes in my oven then I let them cool before removing from pan. They came out nice and chewy. I substituted monk fruit sweetener for the sugar. I did not roll them in additional sugar before cooking. I thought they were sweet enough. I will definitely use this recipe again.
