PBfit Chocolate Peppermint Protein Balls
INGREDIENTS
- 1 cup PBfit Cocoa
- 2 Tbsp cocoa powder
- 1 cup almond flour
- 1/4 cup maple syrup or liquid sweetener of choice
- 1/4 cup heavy cream or milk of choice
- 1-2 Tbsp water if necessary to finish moistening the mixture
- 1/4-1/2 tsp peppermint extract
- 1/4 tsp sea salt
- 2-4 Tbsp crushed candy canes, or cacao nibs for a healthy crunchy option
- 1/2 cup semi - sweet chocolate chips

In a medium sized bowl, add PBFit Cocoa powder, almond flour, cocoa powder, and salt stir till evenly combined.

Add in maple syrup, heavy cream and peppermint extract and stir till mixture is moist and comes together. If mixture is still slightly dry add a little water at a time and stir till combined

Once combined scoop into balls and roll between hands to smooth and place on a parchment lined tray.

After all the truffles have been scooped place in the freezer for 10-15 minutes until chilled. In the meantime, melt the chocolate chips in the microwave.

Remove the truffles from the freezer and using a fork drop the truffles one at a time into the chocolate and then place back on the tray. Immediately top each truffle with crushed candy canes before the chocolate sets.

Once all the truffles have been dipped let set at room temperature.
