Belgium Street Waffles
PBfit Pure Peanut Butter French Toast with Brulee Bananas
|3 large eggs|
|1 cup whole milk, or plant-based milk|
|1 tsp vanilla extract|
|½ cup Pbfit Pure Peanut Powder|
|1/2 tsp cinnamon|
|6 slices whole grain bread cut into 1/2-inch slices|
|Unsalted butter or coconut oil, for frying|
|Brulee Bananas For Topping:|
|2 Tbsp light brown sugar or coconut palm sugar|
|2 firm bananas, sliced|
Make the French Toast:
Preheat the oven to 250°F.
In a large shallow bowl or dish whisk together eggs, milk, PBfit powder, salt, and cinnamon.
Soak as many slices in the egg mixture as possible for 5 minutes, turning once.
Heat 1-2 tablespoons of the butter or coconut oil in a very large sauté pan or griddle over medium heat. Add the soaked bread and cook for 2 to 3 minutes per side, until well browned. Add more butter and oil to the pan as needed. Once all the bread is cooked, place it on a baking tray in the warm oven.
Make the Topping:
Slice the bananas lengthwise. Sprinkle the coconut palm sugar over the cut side of the banana. With your kitchen torch gently torch the sugar until it just begins to brown and become caramelized. Serve the warm bananas on top and drizzle with your favorite maple syrup.
