PBfit Peanut Butter Truffles

1/2 cup cocoa butter
1/2 cup BBF virgin coconut oil
4-5 Tbsp agave syrup (depends on how sweet you like it)
Pinch of salt
3 cups PBfit Peanut Butter Powder or PBfit Chocolate Peanut Butter Powder
Sprinkles of your choice or crushed peanuts


Melt the cocoa butter and coconut oil together
in a microwave safe bowl. Whisk in agave syrup and salt. Add peanut butter powder 1 cup at a time and keep stirring until all combined. Test for sweetness add more agave if desired. At this point your mixture should be the consistency of warm runny peanut butter. Place in the fridge for 5 minutes and remove and stir. Place back into the fridge another 5 minutes remove and stir mixture. At this point as the mixture cools it will begin to stiffen up. It is ready to scoop into balls when it has reached a medium firm consistency. Line a sheet pan with parchment paper and begin scooping the mixture into desired sizes. In a separate bowl place sprinkles or crushed peanuts. Roll each truffle center into a ball and then place into the sprinkles and gently press them into the truffle center and gently roll with your hands to shape back into a ball. If they are still a little sticky place in the fridge for a few minutes to firm them up.
