Peanut Butter Banana Popsicles
Chocolate PB Truffles

|1 cup PBfit|
|6 Tbsp BetterBody Foods Coconut Flour|
|1/3 cup BetterBody Foods Monk Fruit Sweetener|
|1/2 cup & 1 Tbsp canned coconut milk|
|2 oz unsweetened dark chocolate|
|1 Tbsp BetterBody Foods Monk Fruit Sweetener|
1. In a medium sized mixing bowl blend together PBfit, coconut flour and monk fruit. Stir in coconut milk until the consistency of thick cookie batter. Scoop by the tablespoon, roll into balls and place on a cookie sheet lined with parchment paper. Place in refrigerator for 10 minutes.
2. Place chocolate and monk fruit in a small ramekin and microwave until melted (approx. 2 minutes).
3. Dip pb balls in melted chocolate and place on cookie sheet. Refrigerate for at least 30 minutes. Enjoy immediately or place in a freezer bag and freeze for up to a month.
